Eats | Butternut Squash Soup...

Since July, I have been craving the colder months mainly so I can eat a lot of soup and not feel bad.

One of my ultimate favourites is Butternut Squash soup. It is so simple to make and a great crowd-pleaser. I made this for my parents not too long ago and even my Dad (who swears blind he doesn't like Butternut Squash) said he really enjoyed it.




You will need:

3 Carrots
Butternut Squash (frozen chunks work well)
1 Cup Red Split lentils
2 Vegetable Stock Cubes
Salt and Pepper to season

Method:

001) Prepare Carrots and Butternut Squash and add into a large pan.
002) Add in the Red Split Lentils
003) Add in water until it just covers the vegetables
004) Add in Stock Cubes
005) Cook until the veggies are soft.
006) Once veggies are soft, use a handheld blender to blitz until smooth.
007) Enjoy!
