Eats | Carrot Cake Cookies...


Carrot Cakes have to be one of the tastiest creations...but definitely not the healthiest! Stumbling through google, I came across this recipe for Carrot Cake Cookies which have all the taste, but none of the unhealthy stuff!


You will need:

1 large Carrot or 2 smaller ones
1 egg
1/2 cup Maple Syrup
1 cup Oats
1 1/2 tsp Baking Powder
1 1/2 tsp Cinnamon
Pinch of Salt
1 tsp Vanilla Extract
3/4 Cup Wholemeal Flour
2 tbsp Coconut Oil



001) Into a bowl, add the Flour, Cinnamon, Baking Powder, Salt and Oats.
002) Next on a low heat, melt the Coconut Oil and leave to cool a little
003) Into a separate bowl, combine the Coconut Oil, Egg & Vanilla.
004) Add the Maple Syrup into the bowl with the Coconut Oil mixture.
005) Add the Flour mixture into the Coconut Oil mixture and then fold in the carrots.
006) Put the mixture in the fridge to chill for 30 mins.
007) Preheat the oven to 165c
008) Spoon the mixture to create around 15 cookies onto a baking sheet with grease-proof paper.
009) Bake for 15 mins
010) Leave to cool and enjoy.
