Eats: Gingerbread Energy balls...



Naturally, I have a sweet tooth and I crave sweet things. While browsing Pinterest, I was continually coming across various recipes for energy balls. As I was pinning more and more of them, I decided to give them a go as a sweet alternative.

Gingerbread is one of my favourite flavours - I will try anything from lattes to Gingerbread men and everything in between. So when I came across a recipe for Gingerbread energy balls, I had to give it a go.

Here is what you need:

8 Medjool dates
50g Pecans
100g Cashews
1/2 tsp Ground Ginger
1/4 tsp Cinnamon

001) Roughly chop the dates (make sure to remove all the stones)
002) Into a food processor, add the Pecans & Cashew nuts and blend until they are finely blitzed.
003) Add the dates, Ground Ginger & Cinnamon and blitz until combined.
004) Roll the mixture into balls and place into a container.
005) Place balls into the fridge to set a little
006) Enjoy!
