Eats: Healthy Chicken Satay recipe...


Chicken Satay is one of my favourite dishes and generally one that I don't have too often. So one day, instead of buying a pre-prepared one, I decided that I would have a go making one from scratch by adapting a recipe I found online.

You will need:

400g Chicken
1/2 Onion
1/4 tsp Chilli Powder
1 1/2 tbsp Crunchy Peanut Butter
1 tsp Soy Sauce
1 tbsp Lemon Juice
1 tsp Brown Sugar
1/2 cup light Evaporated Milk
1/4 cup Chicken Stock
75g Brown Rice (per person)

001) Put the rice onto boil (brown rice takes much longer than you think!)
002) Cook the chicken (I lightly fried mine) and make sure that it is cooked all the way through.
003)  To make the sauce, cook the onion for a few minutes until soft. Add the remaining ingredients and simmer for around 10-15 mins or until the sauce has thickened.
004) Serve and enjoy!
