Aubergine/Eggplant crisps...

Aubergine, Eggplant Crisps, Teacups and Buttondrops,

What to do when you're hungry and only have an aubergine in your kitchen? Make aubergine crisps. Simple, delightfully tasty and easily adaptable to suit your taste, these crisps are not only healthy but slightly addictive.

Here's how to make them:

001) Preheat oven to 180c.
002) Thinly slice your Aubergine - I cut a few slices too thick and they took longer to get their crisp on. At this stage you can add on any seasoning you wish. For these ones, I just added a little salt and pepper at the end.
003) Arrange on flat baking tray and spray with oil. I used Frylight spray Olive Oil for mine. Place into oven.
004) Check on the crisps regularly and turn often. Depending on how thin your slices are will depend on cooking time.
005) Enjoy!
